pumpkin muffins
With Thanksgiving right around the corner, we’re thinking about all kinds of yummy treats and besides turkey, nothing says Thanksgiving like pumpkin. And while I love pumpkin pie as much as the next guy, it can be used so many other ways. Muffins, for example.
I got this recipe from my sister who got it from… Lord knows where. This is one of those recipes that passes from hand to hand and whose origins are lost in the mists of time. But the fact that it’s got such longevity usually means it’s a good recipe and so this one is.
Ingredients:
3 cups sugar
4 large eggs
1-1/2 cups melted butter
2 cups (or 1 can) cooked, mashed pumpkin (not pumpkin pie filling)
3-1/2 cups flour, unsifted (may mix wheat/white 50/50)
1/2 tsp baking powder
2 tsp baking soda
1-1/2 tsp salt
1 tsp ground cloves
1 tsp cinnamon
1 tsp nutmeg
Directions:
Preheat oven to 325 degrees. Combine sugar, eggs, oil or butter, and pumpkin in a large bowl. In a separate bowl, mix flour, baking powder, baking soda, salt, cloves, cinnamon, and nutmeg. Add flour mixture to pumpkin mixture and stir well, until smooth.
Spoon mixture into 2 well-oiled muffin tins (or you can use muffin papers). Bake for 20 minutes, or until a knife or toothpick inserted into a muffin comes out clean. Cool slightly, and remove from muffin tins to a wire rack to finish cooling. Makes 2 dozen muffins.
(This recipes can also be used to make a bread loaf: Pour batter into two greased oaf pans and bake at the same temperature for 40 minutes or until a toothpick inserted into the center comes out clean.)
Note: When I make this recipe next, I will document internal temperatures for more exact doneness. I’m also a little wary of stirring the flour mixture too much as you don’t want to create too much gluten and make the muffins tough.)
