minty cucumber yogurt sauce

This cool refreshing sauce goes great with lamb or any spicy dish.

Ingredients:

1 32oz. container plain yogurt
1 bunch (1/2 cup) chopped mint or 3-4 teaspoons dried mint
1 cucumber peeled, grated and drained in colander
salt to taste
1 tablespoon lemon juice (optional)
1/2 cup chopped cilantro (optional)

Directions:

Place a double layer of cheescloth in a fine mesh sieve and drain yogurt for 1 hour.

Mix all ingredients in a bowl and let sit in fridge for 2-3 hours. Serve chilled with grilled lamb with mediterranean spice rub
