citrus-marinated steak tips
Even as we slide into September and the first leaves on the trees in our neighborhood start to take on a distinctly reddish tinge, I’m not ready to let go of grilling season. So, to provide that summery sparkle as the autumn advances, we have these citrusy steak stips. Yes, I know citrus marinades are traditionally reserved for fish and other light proteins. So what? Give it a chance and you’ll see that it stands up to the red meat and tastes pretty nice to boot. I think these will still be giving me summertime vibes while I’m grilling hip-deep in snow in February.
Ingredients:
1 pound steak tips
1/4 cup red wine
1/4 cup olive oil
2 Tbsp lemon juice
2 Tbsp lime juice
1/2 cup orange juice
1 Tbsp Italian seasoning (or a combination of oregano, rosemary, and basil)
1/2 tsp chipotle chile, dried ground
1 tsp jalapeno chile, dried ground (or substitute red pepper flakes)
salt & freshly ground black pepper, to taste
Directions:
Combine the ingredients in a bowl and marinate steak tips for at least 30 minutes. An hour might be better, but no longer as the citrus acid will begin to break down the meat.
After removing the tips to the grill, place marinade in a small saucepan and bring to a simmer. Reduce over a simmer until the sauce is thick enough to coat the back of a spoon.
Baste on the steak tips as they cook.
