chipotle sloppy joes

This came from the web site of a local NBC affiliate somewhere in an article entitled “Girl-friendly Tailgating Recipes.“ Based on the use of the word “girl” to refer to women, and without cheating, where do you think the affiliate is? You might be surprised. Anyway, the sloppy joes are tasty and I’m no girl or woman.

The recipe is originally from “The Healthy Beef Cookbook” put out by the American Dietetic Association and the National Cattleman’s Beef Association. What more can you want than sloppy joes that are good for you? The original had some kind of crunchy coleslaw to put in the sandwich, but we decided to skip it. Instead we paired it with some leftover Mexican rice and leftover spicy indian cabbage with carrots. Very good accompaniments and a quick meal for which we already had all the ingredients in the cupboard. We also fiddled with the proportions of the ingredients as well to punch up the flavors a little bit. We’re glad we did. We’ll be making this again.

Ingredients

    1 pound ground beef (80-85% lean) 1/2 cup chopped onion 1 Tbsp oil 3/4 cup ketchup 1/2 cup frozen corn (although we substituted some leftover grilled corn) 1/2 cup canned black beans, rinsed and drained 3/4 cup tomato sauce 2 Tbsp minced chipotle peppers in adobo sauce 1/2 tsp ground cumin 1/4 cup chopped fresh cilantro 1/4 tsp salt 1/4 tsp black pepper hamburger buns, toasted
Directions Set non-stick saute pan or skillet over medium heat and add oil. When it shimmers (about two minutes) add onions and cook until its begins to turn translucent, 2-3 minutes. Add ground beef and cook for 8 to 10 minutes or until the beef is no longer pink, making sure to break the beef up. Strain out any extra fat or drippings. Stir in ketchup, corn, beans, tomato sauce, chipotle peppers, and cumin. Bring it to a boil. (The mixture will be fairly dry, but look for bubbles to start popping.) Reduce heat and simmer 5 minutes, stirring often. Stir in cilantro, salt, and pepper. Makes 4 servings.
